ABOUT THIS OIL

Hand-harvested from our groves in Val d'Orcia, between Pienza and Trequanda, at 443 metres. The mill is less than a kilometre away, and the olives are pressed within 36 hours of picking — usually the same day. Unfiltered, cold-pressed, organic farming practices, and nothing in the bottle that didn't come off our trees.

A Leccino-forward blend with Moraiolo and Olivastra. Fresh and fruity — green apple, artichoke, cut grass — with a gentle peppery finish rather than the throat-catching bitterness some Tuscan oils lead with. Smooth enough for fish and vegetables, structured enough for bread and pasta.

THE 2025 LAB ANALYSIS

Every harvest is tested. Here is this one, and what the numbers mean:

Free acidity: 0.26%. The legal ceiling for extra virgin is 0.80%. Low acidity means healthy fruit, picked and pressed fast.
Peroxide value: 7.7. The limit is 20. This measures oxidation — how fresh the oil is and how carefully it has been stored.
Polyphenols: 447 mg/kg. These are the antioxidants, and they are what you taste as the peppery catch at the back of the throat. Most supermarket oil sits well under 250. The EU allows a health claim above 250.

The full certificate is the second image on this page. We publish it because "extra virgin" on a label means very little on its own, the numbers are the only part you can check.
