WHY WAVY HILLS?
- Pienza, Tuscany: Our groves are located in the heart of Val d'Orcia, between Trequanda and Pienza at 443 meters elevation
- Ultra-Fresh: The mill is less than 1km from our grove and olives pressed within 36 hours of harvest, and typically on the same day
- 100% Organic: No pesticides, no chemicals, only natural organic farming practices. Certification Pending.
- Traditional Method: Unfiltered and cold-pressed to preserve flavor and nutrients
- Small Batch: Limited production ensures quality over quantity
TASTE PROFILE
A blend of Leccino and Moraiolo olives with a hint of Olivastra creates:
- Delicate floral and fruity notes (from Leccino)
- Robust peppery finish (from Moraiolo)
- Balanced complexity perfect for cooking and finishing
Not overpowering, but full of character. This versatile oil enhances any dish without dominating it.
WHAT YOU'RE GETTING
- Packaging: Metal cans in various formats so that the oil is protected from light and oxidation. The metal can have a plastic nozzle that can be lifted for easy pouring but for aesthetic and practical reasons we typically decant it in smaller containers for serving, though this is not necessary.
- Origin: Pienza, Tuscany, Italy
- Shipped from: New York
- Style: Unfiltered (natural olive particles may settle - this is normal and desirable)
- Production: Cold-pressed, organic farming practices
